.gitconfig: use `git var GIT_EDITOR`

`git var GIT_EDITOR` is better than ${VISUAL:-${EDITOR:-vi}} because
it takes into account all variables: GIT_EDITOR, VISUAL and EDITOR,
and falls back to the platform's default.
